This week is National Gluten-Free Baking Week! Every year, the week before Christmas is celebrated by many as a week to avoid gluten and try new recipes for baked goods and desserts. JB Hook's is the best fine dining restaurant at the Lake of the Ozarks, and our chefs are servers are very familiar with various types of allergies and diet choices. Today we are giving you some insight into gluten intolerance and some delicious dessert recipes to try in celebration of National Gluten-Free Baking Week!


Delicious Gluten-Free Desserts


Whether you want to try out gluten-free baked items for yourself or need some inspiration to serve up for a gluten-free relative over the holidays, these recipes make the perfect treat - minus the wheat! 

Baked Pears

Slice pears in half, put them in a parchment paper lined pan, and top each with 1 tablespoon of butter and a sprinkle of salt. Add additional flavor with cinnamon and clove or thyme and bay leaves. Bake them for an hour at 400-degrees Fahrenheit, turning them every 15 minutes. Serve with cold crème fraiche or heavy cream.

Naturally Gluten-Free

If you are looking for dessert options that are naturally gluten free, you can try one of these great options that have a multitude of different recipes available online. Crust-less cheesecake, flourless chocolate cake, and macarons (naturally made with almond flour) are all great options! 

Flour Substitute 

There are a lot of different ways to enjoy gluten-free baked items, and one of the easiest is by using a gluten-free cup-for-cup flour substitute. Some recipes call for three different kinds of flours and additives like Xanthan Gum, which can make them expensive and complicated to follow. Instead, find a brand of flour that advertises itself as a cup-for-cup substitute. That means you can just use that flour instead of regular flour in any recipe and still end up with a great texture! 


What is Gluten?


Gluten is actually the Latin term for "glue". While that doesn't sound very appetizing, it does describe the function of gluten in foods pretty well. This protein is found naturally in wheat, rye, barley, and other common grains. Gluten really does act like a glue that helps hold foods together and gives pastries and other bread items their beloved soft, elastic texture. Gluten-free baked items usually contain Xanthan Gum to add some of that elasticity back into the recipe and mimic the texture that gluten provides. Gluten-free recipes have come a long way and can be really delicious when they're made correctly.
