A Fantastically Delicious Cut of Steak - the Prime Rib

National Prime Rib Day is observed every year on April 27. Here at the best steak & seafood restaurant at the Lake of the Ozarks, every day can be Prime Rib Day when you join us for dinner! Prime rib is one of the many succulent steaks that we serve daily, and in honor of this marvelous meat, we've gathered a few interesting facts about it to share with you. 


  • Prime rib is sometimes referred to as the "King of Meats." One taste makes it incredibly clear as to why that is. 
  • It is also known as a "standing rib roast." The reason for this is because it is actually roasted in a standing position. 
  • The name prime rib refers to the origin of the cut, not the USDA grade. 
  • There are 8 primal cuts of beef, and prime rib is one of them.  It is cut from the area behind the shoulder but above the lower back, which is where you will find some of the most tender meat.
  • The cut is made of 2-7 ribs, taken from between ribs 6-12. 
  • A rib eye roast is a boneless prime rib, but it must be cut from the meat before it is cooked to earn this title.   
  • There is a generous amount of marbling on a prime rib. This is a big source of the juiciness and incredible flavor that this steak possesses. 
  • There are lots of flavorful drippings coming off of the meat while it is being cooked, and this serves as the au jus that is served alongside it. 
  • If you decide to cook your own prime rib at home, choose a cut that has a bright color and milky white fat. (Of course, it's a lot simpler to just come into JB Hook's and let our professional chefs take care of the cooking for you!)

All of the steaks at our Lake of the Ozarks fine dining restaurant are hand-carved, USDA choice or above, and aged a minimum of 21 days. Our savory Prime Rib Dinner, available after 5 pm, is seasoned to perfection and can be served traditional, charbroiled, or blackened. You can order it as a regular cut, or we also serve a larger extra cut for the heartiest of appetites. 

Your flavorful prime rib is also served with your choice of salad (Caesar, Greek, Gregory's Salad, or Classic BLT Wedge) or soup (French Onion, Salmon Bisque, or Soup Du Jour.) It also comes with one of our delicious side dishes, which include Garlic Mashed Potato, Baked Potato, Amaretto Carrots, Vegetable Du Jour, or New Orleans Rice. Pair that incredible meal with a nice bottle of wine or delicious cocktail from our bar and you've got a wonderful dining experience in store.
