Friday Morning

Trying to make a delicious breakfast that lives up to the feast the day before can seem like a daunting task, but we have the tips to help you out. Whether you are preparing a meal for a small group or a large family, we have just the thing.

Charcuterie Omelet

Collect the leftovers from the charcuterie tray... Prosciutto, Gouda, Kalamata olives, and any of your other favorites. Mix three eggs in a bowl with fresh herbs (like basil or rosemary) and salt and pepper. Pour the egg mixture into a skillet that has been lightly oiled. As the base starts to cook and whiten, add in chopped pieces of meat, cheese, and olives. Once most of the egg mixture is starting to set up, fold it in half for the perfect omelet. Right before you remove the omelet from the pan, lay another slice of cheese over the top and put a lid over the pan to help it melt into the omelet. Serve over a piece of toasted multigrain bread for a hearty Thanksgiving breakfast.

Breakfast Casserole

If you have to feed a large group of people, you may want to go with a breakfast casserole instead. Mix stuffing, eggs, cheese, ham and turkey pieces, and fresh peppers for extra crunch and texture into a greased baking pan and bake until cooked through. This is sure to be a crowd-pleaser!

Work Week Lunches

Feed your household for the whole week by making sandwiches and salads ahead to grab and go for work! Make quick and easy sandwiches that you can freeze and then thaw for lunches during the week. Place the bottom half of Hawaiian rolls, or your favorite type of dinner/sandwich roll, into a foil tin. Spread mustard or mayo across the bottom of the rolls, then layer pieces of holiday ham or turkey across every roll. Then layer slices of cheese on each sandwich. Now for the secret ingredient: spread cranberry dressing on the second half of the rolls and then place them on top of the sandwich. Melt butter in a small bowl and mix in herbs, garlic, salt, and pepper for flavor. Use a silicone brush (no one wants brush hairs in their sandwich!) to brush the butter mixture on top of every sandwich. Place the tray in the oven at 350 degrees Fahrenheit and bake until the cheese is melted and the sandwiches are warmed through. Serve warm and enjoy!
