History of Restaurants & Waitstaff 1787 | ​The French Revolution  Before the French Revolution, food sales were strictly controlled by something called guilds. For example, you had to be a member of a specific guild in order to sell that particular kind of food. If you weren't, then your food sales were illegal. Crazy, right? Once the French Revolution happened, guilds were banned and a lot of home chefs lost their jobs.
