May 21st is National Waitstaff Day! JB Hook's is the best restaurant at the Lake of the Ozarks, and a huge part of that is our outstanding waitstaff! Today we are here to help give you background information on the history of waitstaff and some ideas on how you can celebrate the day! Keep reading to learn more.


History of Restaurants & Waitstaff

1787 | ​The French Revolution 


Before the French Revolution, food sales were strictly controlled by something called guilds. For example, you had to be a member of a specific guild in order to sell that particular kind of food. If you weren't, then your food sales were illegal. Crazy, right?

Once the French Revolution happened, guilds were banned and a lot of home chefs lost their jobs. The most ambitious of these chefs decided to start their own restaurants with aristocratic style they picked up in the homes where they had worked. Servers were often butlers and footmen that had also served in these aristocrats' homes. Thus, the restaurant was born!

The 1800s | Restaurant Industry in Europe & North America​


As transportation became easier in the 1800s with trains and cars, there was a lot more travel in these areas. With people travelling away from their homes, there was a greater demand for restaurants. As restaurants popped up, a lot of jobs were created and people moved to the area to work​ as waitstaff.

The 1900s | Chain restaurants


Restaurants grew even more as places like White Castle, McDonald's, and others started fast-food chains that spread rapidly through the United States.

The 2010s | Return to Local, Fine Dining


While fast-food restaurants are still undeniably popular, the trend in food service has been moving back to fine dining in local restaurants. Consumers are more and more conscientious, pushing to support local businesses and small business owners. They also are looking for more sustainably-sourced ingredients and food that is flavorful and healthful instead of just quick and cheap.
