First, here is a little information about the different cuts of beef that you will find on the JB Hook's menu.
This cut of beef is French for "tender fillet" or "dainty fillet." Interesting fact, if you order a filet mignon in France, it will probably be pork! Here in America, we expect it to be beef. This is the most tender cut of beef, and it comes from the smaller end of the tenderloin.
Other areas may refer to this cut as a New York Strip, Ambassador, or Boneless Club Steak, but around here we prefer to use the name that comes from this great Missouri city. This is also a very tender cut of beef that comes from the short loin. Even though it consists of muscle, it's a muscle that does very little work.
This cut of beef comes from the primal rib, one of nine primal cuts. To be graded as prime, this meat must be tender and have generous amounts of marbling.
